After a year of eating in, we’re trying to keep it simple in the kitchen. These days, we love whipping up the beloved McCarthy Salad from the Polo Lounge at The Beverly Hills Hotel. Legend has it that one day in the 1940s, Neil McCarthy, captain of a local polo team and a regular of the Polo Lounge, requested a salad with a very specific list of ingredients, and thus, his namesake salad was born. The recipe has been the same ever since and remains one of the most popular dishes on the menu.

  • For the salad:
    • ¼ head iceberg lettuce
    • ½ head romaine lettuce
    • ½ cup diced, grilled free-range chicken
    • ½ cup diced, roasted red beets
    • ¼ cup free-range egg yolk
    • ¼ cup free-range egg white
    • ½ cup finely diced aged cheddar cheese
    • ½ cup applewood-smoked bacon
    • ¼ cup diced tomato
    • ¼ cup diced avocado
  • For the dressing:
    • 1 cup balsamic vinegar
    • 1 shallot
    • 1 tablespoon brown sugar
    • 3 cloves roasted garlic
    • 1 teaspoon Dijon mustard
    • Salt and black pepper to season
    • Canola oil

To assemble:
1. Artfully arrange the salad ingredients in a bowl.
2. Place the dressing ingredients in a blender and drizzle a bit of canola oil in to emulsify.
3. Add the dressing and enjoy!
